I’ve had a leak in the pool’s plumbing for a few years now, I lose about an inch or more every two days, this only happens when I run the pump. Since there are pavers around the pool, are the pool repair / maintenance companies able to restore pavers also or should I have the pavers removed first before hiring the pool repair service? Can the pool leak source be isolated to the skimmer or the return lines via pressure tests?

Most pool installation/repair outfits have guys that do masonry work. Probably better to limit dealing with just a single contractor. We had our liner replaced and all the coping redone a few years ago. The new coping required the pavers around the pool to be reset and it was all part of the job. We used a contractor called AllStar Contracting in Nassau County. They did a fine job but you should expect an eye popping estimate.

Yes. Many of today's leak detection services get quite accurate with their processes and equipment. That can help to minimize the digging required to repair the leak.
