Central NJ Tile selection for Waterline and Raised Spa Wall

Working on renovation of free form pool and looking for comments / confirmation that Porcelain is the correct material for frost thaw climates like NJ. We have a free form pool and I understand 6X6 would be ideal size tile but I am not sure why that is if someone could educate us. Also MIGHT I be able to use a 8x8? Would a 6 x12 require too much cutting?
We read the "less the grout" likely more reliable ( if installed properly). Looking for a medium blue tile as we have a wall of tile to the raised spa and want something subtle that will stand the test of time. We do not have a tile or coping installer in Central NJ if we are allowed to ask for recommendations? We got the importance of installation from here so thank you for any other guidance.
 
Depends on the shape and size of the pool and how the layout of the tile would work.

I don't understand what you want to be educated about.

Show us the design of the pool and the tile samples you are considering.

What you can do it draw the pool on graph paper. Then you do pieces of paper that represents the different sizes. That will allow you to see how much the tiles will have to be cut and what it could look like. I will tell you that another idea is to use concrete instead of pavers. Forms can be put down to follow the lines of the pool.
 
Thank you. Will work with the graph paper and we are determined to stick with 6x6 tiles. There is a raised spa wall and we found a tile that is interlocking for the Wall that is 6 x 16 wide. Next steps to determine IF the wall is flat enough ( taking off cover to determine) and determine if this is just a wasteful choice and move to finding a 6X6. We are not choosing glass tile because the installation is so critical and we have not landed with the tile and coping people yet. Working toward the right contractor(s) here in NJ is challenging.
