I have to winterize my pool soon and I’ve been thinking about just making a short standpipe out of pvc I can put/thread in my skimmers that extends above the water level. This way I can blow the lines out and also be able to look in to make sure the pipe is sealed. The same idea as those Gizmos but much stronger and I can look in from above. I can then put a poly bottle (or something) in the skimmer to account for the expansion of ice. Anyone ever done this?

They make blow through gizmos exactly like you wish to build. The irony of your stronger pipe is that you then need something compressable in there. Your plan would work fine though.
I stuff my skimmer with cut up pool noodles, also in the mouth.
