How to surround semi-in ground with stone and cap

Hi gang. We're about to purchase a 15x30 oval, and have them bury it either 2' or 3'. I want to surround the visible portion with some stone, and a stone or paver cap. The installers will pour a concrete collar. I need advice on what to do at that point. I _think_ I will need to get a few inches of crushed rock to level out on top of the collar, then I can use cinder blocks to build a wall around the pool until I get to just under grade. Am I right so far? Then, I can stone on top of that up to the top of the pool edge, so that I can mortar solder pavers in as a cap. Do I fill the void between the pool wall and the block wall with anything? Is there some better way, things to do/avoid/etc?

Yep, pretty much like that. It's hard to tell in that bottom pic, but if those are real stone, what are they sitting on? There's surely some kind of footing under the stones. Do people build a cinder-block wall from the base of the hole that's dug out when the pool is built? Then, that cinder-block wall comes up to the level of the ground, and the stone surround sits on that? Or do people go ahead and back-fill around the pool, let it settle for a few months, then dig out to pour a footing for the stone surround to sit on?

I'm interested in this as well. We're currently thinking about replacing our intro EasySet with a slight step up, but would like to bury it a 2-3ft to allow for easier access to the pool, especially for our dogs. Figured we'd put some sort stone or bricks around it, or anything to make it more aesthetically pleasing.
