Gunite Watering. Can I just fill the pool with water?

You just need to keep it damp, you don't need to drown it... :p

The color is just the color of city water, it is never clear. The color of the water once your pool is plastered will be different and will depend a lot on the color of the plaster itself.

Gunite is not water tight. I would be concerned the water would seep into the surrounding ground and make it a mushy mess. They want the gunite damp for plastering, not saturated. It may affect the integrity of your plaster finish if the gunite is saturated.
 
My pool filled with 4+ feet of water during the couple month period before plaster. They pumped it out three times but many weeks went by with it half full of nasty green (pollen) water.

I wouldn’t fill it because they’ll have to pump it out anyway and all that water would be a pain to deal with figuring out where to discharge.

The newer the spray the worse it is to have it full of water. After 30 days or so you can have water accumulate but I would certainly would not let a freshly sprayed pool fill with water.

Keeping it damp for the first 30 days is recommended to help the concrete cure properly.

Stick with what works.

Specific to the curing of the gunite it is not more or less beneficial having it under water when its 100+ outside?

Specific to curing, submerging concrete in a small volume of water after the first 4hrs is beneficial to the curing and will add strength, regardless of temperature. Larger volumes of water, like filling your shotcrete pool, can leach calcium ions and weaken it. This can be countered by adding a bunch of lime to the water. Technically, keeping the pool filled with water and lime will result in the highest strength and best cure.

That said, I'd just spray it down a few times a day as suggested. My biggest concern would be algae or scum on the walls impeding the bond between the shotcrete and plaster.
