How much “slack” should there be with filter hoses for above ground pool? Enough that some of the hose rests on the ground? Or no need for any of the hose to touch the ground? Does one way cause unnecessary weight and pull on the pool wall, return jet, etc? Thanks

What model pool are we discussing?

What type of walls and supports does the pool have?

Show us pics of the pool and area of concern.

The hoses are fine as far as hoses go. They don't need to be supported to work properly. However they are hoses and over time will degrade, stretch out, and leak. You have to be careful about tightening the hose clamps. If you go too tight you can crack the fitting which causes more leaks. If you want you can hard plumb the pool with pvc pipe and unions with valves. Unions would allow you to disconnect the pump and filter for winter and valves allow you to shut off the flow of water if you need to work on the pool. Right now since you have no valves on your plumbing you would need to plug the skimmer and return to open the pump basket to clean it out. Otherwise all that pool water will be flowing out of the open pump and you will lose quite a bit of water.
